
Poached pear bircher muesli is wholesome while luxurious at the same time. The muesli is made as a simple over night oats with flavours of cranberry and orange. Then topped with a sticky poached pear it is almost like dessert in a bowl of muesli.
Such a convenient breakfast, this can be made ahead with the finishing touches added just before serving. By cooking the poached pears the night before in the Thermomix the sauce thickens overnight in the fridge to make a sweet sticky sauce. The spices penetrate the pears to impart an aromatic flavour to the overall dish.

The first time I tasted this recipe was in Café Gusto in Cork. It was when healthy breakfasts became á la vogue and as important as your favourite meal out. I mean who would’ve thought we would be eating cold porridge and love it? When I was 16 I went to boarding school where we actually used to be served cold porridge (when it was meant to be hot). We used to have an empty crisp bag under the table just to add the lumpy porridge before the nuns could catch us! I’m surprised I still love eating porridge to this day.

Poached Pear Bircher Muesli
Description
A fragrant Bircher Muesli made with aromatic sweet spices, chopped pears, pistachios and dried cranberries then topped with a sticky poached pear
Ingredients
For the poached pears:
50g cranberry juice
1 orange
50g water
2 pears, peeled and left whole
1 inch cube ginger, peeled
1 teaspoon cinnamon
Pinch of freshly grated nutmeg
2 cloves
For the muesli
200g jumbo oats
½ teaspoon ground cinnamon
250g orange juice
140g natural Greek yogurt
30g pistachio nuts, shelled
30g mixed seeds of your choice: pumpkin, sesame, sunflower, linseed etc
20g dried cranberries
Instructions
Poach the pears first. Thinly slice the orange rind and add to the TM bowl. Grate 10 Sec. / Speed 8. Scrape down the sides. Squeeze the rest of the orange and add to the bowl.
Add the cranberry juice and water to the TM bowl. Add the honey then heat 1 Min. / 100˚C.
Add the ginger, cinnamon, nutmeg and cloves to the poaching liquid.
Place the peeled whole pears to the Varoma basket and steam 20 Mins. / Varoma / Reverse Speed 1. Remove the Varoma basket and reserve the pears in a shallow dish.
Keeping the poaching liquid in the TM bowl, thicken by cooking for a further 10 Mins./90˚C/ Speed 1. Pour the syrup over the pears, leave to cool then place in the fridge overnight.
To make the muesli, mix the oats, cinnamon, orange juice, honey and greek yogurt in a bowl, cover and place in the fridge overnight.
The next morning, add some chopped pears, pistachios, seeds and cranberries to the muesli. Top with a sticky poached pear.
