This authentic hoisin sauce recipe is rich in flavour and spices. Made with your own homemade Chinese Five Spice and prunes. Made in minutes in the Thermomix

1 star anise

¼ teaspoon fennel seeds

5 peppercorns

2 whole cloves

1 cinnamon stick

2 cloves garlic

1 inch cube ginger

200g soft prunes

40g apple cider vinegar

10g sesame oil

300g honey

200g soy sauce

100g water

15g cornflour

2 teaspoons sweet chilli sauce

Place the star anise, fennel seeds, peppercorns, cloves and cinnamon stick in the TM bowl. Grind 5 seconds, speed 10. Scrape down and grind again 10 seconds, speed 10.

Add the garlic and ginger and mince with the spices 5 seconds, speed 10. Scrape down and mince again 3 seconds, speed 8.

Add the remaining ingredients except the cornflour and place the lid of the TM with the simmering basket on top. Cook 5 minutes, 100˚C, speed 2.

Mix the cornflour with some of the liquid from the TM bowl until smooth. Add to the remaining ingredients. Simmer 6 minutes, 80˚C, speed 2.

Blend 10 seconds, Speed 8 or until well combined.

Store in a sterilised air tight jar in the fridge until required.

While I recommend grinding your own spices, you may use ready made Chinese Five Spice by substituting the spices with 2 teaspoons Chinese spice.
