This chickpea pizza base is by far my favourite alternative to gluten packed pizza bases. I could have named this hummus pizza base as this recipe has stemmed from my favourite hummus recipe. And it’s as easy to make as hummus, especially in the thermomix!
Packed with flavour
What I love about this recipe is you can add any dried spices to make it your own. I love adding Indian spices such as coriander, cumin and turmeric. Then you can add delicious toppings such as spicy roasted cauliflower. Or if you want to enjoy a pizza topped with roasted vegetables and feta then add your favourite Mediterranean spices. Just top with your favourite pizza toppings and you’re good to go!
This pizza base is unlike other bases as you cook it before you add the extras. It is grilled to make it crispy but you need to keep an eye on it and check it regularly. It tastes so good you’ll be trying to taste it before you start to put on the toppings! I cook it in a skillet pan and then cook it like that in the oven once the toppings are complete, but you can transfer it to a baking tray or pizza stone.

Vegetarian roasted veggie pizza made with Chickpea Pizza Base

Description
A light and crispy chickpea pizza base which makes a delicious alternative to flour and gluten packed pizzas
Ingredients
200g chickpea flour (whole dried chickpeas for thermomix)
1 clove garlic, crushed
½ tsp paprika
¼ tsp ground turmeric
Pinch of salt and pepper
230ml hot water (not boiling)
20g olive oil plus 1 tbsp for grilling
2 tsp light tahini paste
1 tbsp lemon juice
1 tbsp dried mixed herbs
1 x oven and grill proof pan
Instructions
Add chickpeas to the TM bowl and grind 15 Sec. / Speed 10. Scrape down the sides and pulse again 20 Sec. / Speed 10.
Add the garlic and blend 10 Sec. / Speed 10. Scrape down with a spatula.
Add the paprika, turmeric and seasoning and mix 3 Sec. / Speed 5.
Add the hot water, olive oil and tahini paste and blend 10 Sec/Speed 5.Scrape down the sides and blend again 5 Sec. / Speed 4.
Heat 1 tablespoon of olive oil in the pan under the grill for 1 minute until piping hot.
Spread the chickpea pizza base over the bottom of the pan to the desired shape and thickness. You can spread it as thinly as you like with a palette knife.
Place the pan under the grill as low down as you can towards the bottom of the oven. Grill for 10 minutes until lightly golden, checking at regular intervals.
Leave to cool slightly while preheating the oven to 180˚C. Top with your favourite homemade pizza tomato sauce and pizza toppings. Bake for 10 minutes in the oven. Enjoy!
